1 Tbsp. Minced garlic
1 Tbsp. Olive oil
1 cup dry orzo pasta
2 cups low-sodium chicken broth
1 cup quartered cherry tomatoes
2 Tbsp. Minced fresh flat-leaf parsley
1 Tbsp. Minced lemon zest
Salt and pepper to taste
Sauté garlic in oil in a saucepan over medium heat until fragrant, 1 minute.
Add orzo; stir to coat with oil and cook 2 minutes.
Stir in broth, cover, and reduce heat to low. Simmer orzo until tender and most of the liquid is absorbed. 10-15 minutes.
Add tomatoes, parsley, and zest; season with salt and pepper.
